Speculoos Cookies with Red Mug

This week John sat down with Carrie Slick to make some holiday cookies.

SPECULOOS COOKIES:

Ingredients:

2 1/2 Sticks Butter 

1 1/2 Cup Brown Sugar

2 Eggs

1 TBSP Milk

2 TBSP Cinnamon

4 TBSP Speculoos spice

1/2 TSP Salt

1 TSP Baking Soda

2 1/2 Cup Flour

Speculoos Spice Mix:

3 TBSP Cinnamon

1 TBSP Clove

1 TBSP Ginger

1 1/2 TSP White pepper

1 1/2 TSP Cardamom 

Instructions:

1: Cream together the butter and sugar until lightened.

2: Mix in the egg one by one, scraping the bowl between each egg.

3: Mix in the cinnamon, speculoos spice, salt, milk and baking soda.

4: Add the flour and mix until just combined.

5: Refrigerate the dough overnight.

6: The next day, roll the cookies out very thin, and cut using your favorite cookie cutter.

7: Place on a baking sheet and sprinkle with granulated sugar.

8: Bake at 350 degrees for 15 to 18 minutes, or until the cookies bounce back when lightly pressed.
